Carrot cake has always been a favorite at our family gatherings. It's easy to make and only requires a few ingredients. I'm a big fan of it! I love the combination of carrots, cinnamon, and vanilla, especially in moist carrot cake. This is probably because my friend @Pamela Cake Planner makes delicious carrot cake every year at Easter. She loves to bake and her carrot cake is simple but delicious!

During the last few years, it has become more popular, especially after people learned about the health benefits from its prominent ingredients.
