Carrot Cake is my motto

Carrot cake has always been a favorite at our family gatherings. It's easy to make and only requires a few ingredients. I'm a big fan of it! I love the combination of carrots, cinnamon, and vanilla, especially in moist carrot cake. This is probably because my friend @Pamela Cake Planner makes delicious carrot cake every year at Easter. She loves to bake and her carrot cake is simple but delicious!
Carrot cake is definitely a favorite of mine.

Do you know why? Unlike chocolate cake, its appearance is far less intimidating which allows me to consume more of this vegetable-filled dessert (which I like to refer to as “vegetable cake”). This cake is definitely one of the most popular American desserts and there are lots of interesting facts about carrot cake that most people don’t know. And I can’t tell you how much I like learning new things!
Carrot cake is thought to have originated in England where housewives used sweet products (e.g carrots) to naturally sweeten their confections during World War II. In 1943, the Ministry of Food published a short recipe for carrot cake. Carrot cake’s popularity increased in the 1980s due to consumers’ perceived benefits of consuming vegetables with their highly caloric baked goods.
During the last few years, it has become more popular, especially after people learned about the health benefits from its prominent ingredients.
